How long do I need to keep the smoke going? The tray only seems to keep smoke for a couple hours and some (most) recipies are much longer.

That's the beauty of Smokin Tex. What ever you smoke will take on all the smoke flavor you need in the first couple of hours. You don't need to put a lot of wood in the box. If you put too much wood in, your product will have a bitter taste to it. If you are just getting started with a new smoker, the flavor of the product will get better the more you use the smoker. It took me about 6 runs to start getting the flavor where I thought it should be. And from there it just keeps getting better.

This is true about all smokers....the first 2 to 3 hrs the meat gets all the smoke they need.
