I am getting ready to smoke about 6lbs of them for the first time. Has anyone done them before? what temp and time?

I'd run them at 225, look for an internal of about 165 in the thickest part.

I'd go easy on wood, 1 oz of something mild like alder or apple, and I'd give 'em a light rub in olive oil and dust 'em with seasoned salt first.
