View Full Version : Smoked fresh mozzarella sandwiches

16 oz fresh mozzarella
Four sandwich sized french rolls
1 med tomato sliced
1/2 red onion sliced
8 oz Genoa salami sliced
Salt & pepper to taste
Pesto sauce

Cold smoke fresh mozzarella for about 20 mins with 2oz apple wood.
Place mozzarella in plastic wrap and refrigerate for at least an hour.

Slice mozzarella.

Cut french rolls in half and toast in toaster oven or regular oven.
Apply pesto to both halves of toasted french rolls.

Layer of each onion, tomato, salami, smoked mozzarella,
Salt & pepper to taste and enjoy.

My wife has proof read my recipe and says that I need to tel y'all my recipe for the pesto.
It is a family secret but I consider you all my smokin family so here goes.

1 bunch of fresh basil.
1 med head of garlic smashed skins removed, yes, use the whole head. You may sleep alone but it will be with a smile on your face
1 lemon juiced seeds removed
2-3 tablespoons pine nuts,
2-3 tablespoons parmesan
4-5 tablespoons extra virgin olive oil
Salt & pepper to taste

Place garlic in food processor and chop till it sticks to the side.
Add fresh basil, lemon juice, pine nuts, parmesan & olive oil process till smooth.
Salt & pepper to taste.
