Well, I did it again, planted too many Zucchini plants and now I have a surplus. I just got a SmokinTex for Fathers day and I was wondering if anyone has any ideas how to smoke Zucchini or vegtables in general. Wood, times, temps etc?

I would treat it like cheese. Use a mellow wood (pecan or sugar maple) and not much of it -- Cold smoke the zucchini and use in a salad or stuff them with cheese and bake. You could also try pickling them after you're done smoking them--that could be nice. Good luck and let us know what you did--I am curious.
