Hi all we just purchased our smoker yesterday at the Harrisburg show a bit nervous we own an Italian restaurant in PA and we are a bit nervous customers are gonna be leary of buying smoked ribs and brisket from an Italian Restaurant. Plan on having a Sunday BBQ special any thoughts?

Plug it in and go for it. You cant go wrong.Plenty of help here. And I'm sure your can come out with some good ideas also....Try some of your Italian spices, and read the TIPS section....Good Luck.....Happy Smokin'......Steve

I also live in PA and just bought one at the Sportsman Show. It came yesterday after the big snow. I don't own a restaurant, but there are three of us in town who do a lot of fishing in lake Ontario and the Salmon River. The neighbor has been using a charcoal smoker for a couple years, but it a hassle. I am a smoking virgin, but I am looking forward to some great meals from this new smoker.

Good luck with yours, and I would buy smoked food at an Italian restaurant,

There are many, many people who would order smoked foods from an Italian restaurant.
Smoked Ribs is a crowd pleaser at any restaurant. They can be used as an appetizer or sold by the bone. Sunday Rib Night is also popular.
Another great appetizer is Smoked Mozzarella and tomato salad. Or this Smoked Mozzarella and Ricotta Fritters recipe (http://www.foodnetwork.com/recipes/everyday-italian/smoked-mozzarella-and-ricotta-fritters-recipe/index.html) from the Food Network (http://www.foodnetwork.com/).

Sounds great to me also ! I just purchased the 1400 , waiting for it to arrive , I havnt smoked much at all but ready too !
