View Full Version : Used smoker first time yesterday...

I made ribs in my new 1100 and let them smoke for 4 1/2 hours at 225 and put them in foil in the oven for another 1 1/2 hours.I used a dry rub only. The ribs were very tender...fell off the bone, but I thought they were a little dry. Did I cook them too long? Did I put them in the oven too long?

Probably should have foiled them a little sooner. And just leave them in the ST. Keep experimenting. And Good Luck. Let us know what you discover.Steve

Just curious (and am NOT arguing with anyone's technique); "What's the reason for foiling ribs? In eight years of using my ST I've never foiled and the ribs have always been nice & juicy, well, 95% anyway.

To test for done-ness I use the toothpick test. If a tooth-pick will pass thru the thickest part of the meat with little to no resistance, the ribs are done. Make note of the resistance. If the ribs are over-cooked, next time go for a little less time & more resistance.
