This is a hit everytime I cook it---take a 3-4 pound tederloin tied up--season with your favorite herb seasoning and a little tony's---take a large frying pan- over med low heat with olive oil--sear meat for 10 min on each side (nice slow sear) -set smoker on 250 with small amount of cherry (don't over power meat with to much smoke) --1 hour -rare--1 1/2 for med rare
