Try this one some time...also works great on a plain old grill too.

Recipe from a place my wife and I used to eat at quite a bit in Austin, Texas.

Ingredients:
Whole pickled jalapenos
large uncooked gulf shrimp - peeled and deveined
maple flavor bacon
monterrey jack cheese slices
toothpicks or a skewer

cut the stem end off the pepper, cut a lengthwise slit in the pepper and de-seed it.
place a shrimp (peeled and deveined) in the pepper
put a slice of the cheese on each side between the inside of the pepper and the shrimp
wrap with the bacon and toothpick to hold it together.
Season with your favorite rub or just plain old Lawry's season salt
grill until bacon is done or put on smoker at 225 until bacon is done with some apple or cherry wood for flavor.

Sometimes I will marinate the shrimp in Brianna's vinagrette for a few hours prior to stuffing them in the pepper and it adds a nice flavor.

You can also add slivers of onion raw or add carmelized onions in there.

Excellent appetizer!
