How does the cold tray or plate work for doing cheese????:confused:

I don't own a cold tray however saw a picture of one. I believe you place the tray in the smoker then place a tray of ice on top of that. The cold tray insulates the ice tray from the heat. Then place your cheese over the ice tray. Hope this helps.

Just like Brewmaster's picture shows. Slide in the plate, set in a tray of ice, and turn it on. I smoke cheese all the time. Buy the cheapest blocks of cheese Walmart has to offer, and make it taste better then the top-shelf stuff.

To me it was worth the investment.
