View Full Version : smoking a pork shoulder (first timer)

HI All,
Enjoying reading the different entries here on the forum. Today I am breaking in my ST 1400 with a pork shoulder. Recipe that came with smoker suggests 8 oz of hickory but that seems like a lot compared to several posts in here.
Any comments or thoughts as I jump into the world of the SmokinTex?

jpurdy...first...welcome and hope we can help. There are alot great cooks here and will always help.

I cook my shoulders between 225-235 and internal temp of 195-205. This usually results in a very tender meat that pulls easily...I like alot of smoke in my meat so I use 8+ ozs. Don't cook by time...use internal temp as guide.
