Cooking Brisket this weekend in my new 1400. I have been reading several posts about cooking by time or temperature. I would assume temperature is most important just wanted to know what time to put it on to reach 190. cooking at 200 degrees, need to take to a party Sunday afternoon 4:00pm. Have not trimmed fat off yet so I would guess it will be about 12.5 pounds. Also does anyone put the wireless thermometer through the hole on top of smokin tex?

kndrcop...recommend cooking at 225-250...all briskets are different...can't put a time on them...just cook until desired temp. Yes I use a Maverick ET-732 and run down through the top...I would give it at least 12 hours to be safe.

Kndrcop.....I use a temperature probe also, safest way to make sure your food is at the right temperature instead of guessing time. I agree with BillyBob 225-250 would be the recommended cooking temperature.
