If you love good, homemade potato soup, You'll really go for this recipe! Take a couple pounds of new potatoes (small, red potatoes), place them uncovered on foil in your Smokin Tex. Set thermostat at 225 and smoke with heavy smoke for 30 minutes (I like fruit wood such as wild plum but pecan is also excellent).
Remove potatoes and place them in a heavy pot. Add water and half a small onion (diced), boil for about 20 minutes, until potatoes are tender but not 'too" tender. You want your soup to have small chunks of potato!
Now, add about 4 tablespoons of butter and 2 slices of your favorite cheese. Cover with milk and add a couple inches above the potatoes (you will want more 'juice' in your soup!). Slowly heat until cheese is melted.
This smoked flavor turns standard potato soup into a culinary delight!
Just another way to put your Smokin Tex to good use!

I believe you will really enjoy this soup. Make sure and leave the skins on the new potatoes! To make it a bit richer, you can use a little half and half but milk and butter with a little cheese works very well.
