I'm all about slow cooking large pieces of pork, beef, venison, etc. but.. Sometimes we want a BBQ fix and we want it quick! Last week, I was craving some BBQ. I defrosted several packages of venison round steak (you could use beef). I put 4 ounces of dry, wild plum wood in the box of my Smokin Tex, and set the thermostat at 225. I sprinkled some Head Country Championship Rub on the sliced round steaks (cut about three-eight inch thick, and placed them on the racks. I let em smoke about 30 minutes and then put them in aluminum pans and poured Head Country BBQ sauce over them . Remember, ham steak (round) will dry out quickly, it must be cooked with moisture.
I placed foil over the pans and let set the thermostat on my model 1400 to 250 and let em cook about 2 hours.
Next, I drained the moisture in the pan, chopped the steaks and added some fresh Head Country. This made some most awesome sandwiches when served on hot buns. The entire process took about 2.5 hours!
