does foiling a brisket to let it rest ruin the bark if you take it to 195 in the smoker

It depends on your preference...I like mine crisp thefore I don't foil. Foiling will make it soft.

I bring mine to 200 pull and wrap in foil loosely until they are cool enough for me to touch without burning my hands...make sure the foil is open enough to let the steam out.

So I guess I do foil....just not tightly...just enough to let the brisket rest.

BillyBob has, once again, nailed it.

The same can be said for your pork butts, letting the meat rest is critical, just not too tight.
