View Full Version : Smoked stuffed tomatoes

I just 'invented' my version of this dish. Darned tasty if I do say so! Begin with tomatoes that are 'just' ripe, not over ripe. Core them and into the hole you create in the top of the tomato, add some finely chopped onion, a bit of garlic salt, not too much, some finely chopped jalapeno (or bell pepper, your choice), mix in a few bacon bits and top with your favorite cheese. Drizzle a little olive oil on the outside of the tomato.
Put your favorite wood in the smoke box of your Smokin Tex ( I use dried, plum wood) about 3 ounces, give or take. You want a heavy smoke for about 30 minutes.
Allow to cool and place in ice box. Serve chilled with your favorite crackers. They went over big at the Clayton house!

Smoky and crunchy tomato..I love this. Great invention. +1 from me.
