View Full Version : Smoked Peppers and Eggplant

Hi everyone. Has anyone ever smoked eggplant? We just got two eggplants, and I want to smoke them for Baba Ganoush. I cannot locate any recipes that would help. I also have a basket of of Jalapenos, that I would love to smoke as well.

Any thoughts would be helpful

Hello apperrault,

I have no personal experience with smoking eggplant. The nearest is in smoking zucchini and sweet peppers. Veggies like those I coat with a bit of olive oil, salt and pepper, and smoke at 225f for an hour or so. Just cook until vegetables soften a bit - we enjoy a bit of fresh crunch. Just use the wood of your choice. I personally like apple wood.

Do a search on this forum for smoked jalapeno recipes. You will find several. I found a couple that I plan to try that sound simply yummy.

I did a quick search on the internet for smoked eggplant and found a simple suggestion to cook eggplant over an indirect charcoal fire until it was soft. You already have a better and more controlled smoker at your fingertips. Go for it and post your results.
