View Full Version : Whitefish for lunch, ribs for dinner

Last weekend I was smoking some ribs for dinner and hadn't really planned anything for lunch. So I threw some frozen whitefish fillets (still frozen) on the top rack. I smoked everything with just a bit of peachwood at 250F. After 90 minutes the fish was at 157F internal temperature, so I took it out and added some hickory chips to the smokebox. I just squeezed some fresh lemonjuice on the fish and added a bit of salt and pepper. Even though the ribs came out great, I think everyone was more impressed with the whitefish for lunch than the ribs at dinner.

One smoke, two different meals. I love this smoker.
