1. What form of wood works better for the Smok'in Tex and why:
a. Chunks
b. Chipped
c. Pellets

2. Some recipes include the type of wood used and how many ounces to use. Does a person really have to weigh the amount of wood each time? The meat will only be effected by the wood smoke for a certain period of time during the beginning of the smoking procedure.

3. What works best: wood soaked in water or dry wood for smoking and why?

I only use wood chunks in my 1500cxld-never soaked- I weighed the chunks the first couple of times and then eyeballed it ever since
I only use a small amout of wood in my commercial unit to keep from getting too much smoke flavor for my customer base in NC. about 2 to 3 oz per load

Chunks definately work best, however, I find the large chunks that come in the packages usually need to be split a time or two. You don't need much wood. Usually, 2 - 3 oz. is enough per load. It is easy to get too much wood and get the meat oversmoked.
