I had assumed that point - the oven will help speed up the cooking process.

Cut the 3 larger pieces in half so they are all roughly the same weight. Rotate the pieces a few times during the smoke. If you run short of time finish everything in your oven.

I don't have a problem with the peaks/valleys, I just want to narrow the range. If I only wanted 'acceptable', I would just buy smoked products at the supermarket :)
