I wish I knew what I did wrong?
Skin was black. Meat was very, very dry, dark as well as white meat. No leakage around the door. I have been checking the smoker for the last three hours at 30 minute intervals. Smoker set to 225...
Model 1400. I am going to clean the probe and take cabinet temps. Gotta try something. Let you know what numbers I get. Thanks for your help.
How do you plan a meal when you hear 30-45 minutes a pound. You expect it to take about 13 hours and it takes 4.5 hours? We trashed the turkey. It was burned.
One in the breast and one in the thigh. Did not verify breast temp. Bird was 18lbs. It has been cooking just over 4 hours. Thanks for the reply.
Any idea why it was done so fast?
Disaster. It is currently 3:25am. Both temp probes are showing 172degrees. The 18 pound turkey has been on for only 4.5 hours! How can this be? It was set at 225 degrees. I have turned it down to 150...
Does anyone know, do you rinse the brine off prior to smoking the turkey?
Is there a dry rub to use with the marinade???
Is there a specific dry rub to use under the skin with the marinade? Or will the dry rub wash away when submerged? (Unless applied after it comes out of the marinade bag). I am going all-out this...
Thanks for the FAST reply. Better than FedEx!
Lots of good info. Couple of questions.
1. Do you plan on the bird cooking for 40 or 50 minutes a pound?
2. When finished are the temps 165 degrees for the breast and 180 for the thigh?
Sorry for...
I do tri-tip here in San Diego all the time . Like it better than brisket. I prepare mine pretty much the same way....rub real good(very important). Once internal temp of 170 degrees has been...
I can answer my own question. I ground down an old wrench and made it fit!
How do you remove the wheels from a 1400? I thought they popped out but that is not the case. I am begining to think there is a special wrench I no longer have. Any ideas?
Thanks...
Spray simple green inside. Wipe it completely down. Then, to get rid of the simple green smell, put some wood in the box (twice the amount you usually use) and turn the temp up to 250 drgrees. Let...
That sounds like an excellent way to do it. Much easier. I will try that way too. I did give brining a try and this is what I did:
Advanced preparation: 16 hours for brining the turkey
• 1 12...
The procedure above also worked for me.
I also wondered about brining. I have had my Smoking Tex for over 3 years now. On Jan 2nd I plan on practicing Brining on a small (10 lb) Turkey. This will be my first attempt. My other Turkeys...
