All done. Going to be some good sandwiches this week for lunch.
Hit the stall at 162. Wrapped in butcher paper to help it motor through the stall. Looks and smells amazing.
Been really busy with work. Finally things have returned to normal. Also added several new toys to my BBQ addiction, and have been playing with those. Hope this message finds everyone well.
Discovered this boneless pork shoulder picnic in my travels yesterday. Though would be great to slice up for lunches this week. Also trying out a new rub.

Let it cool a bit. Then cut it into bite sized pieces.

2 hour mark. Removed remaining wood and ashes from the smoke box and returned. Turned temperature down to 130. Placed dryer on the smoker.

Nothing like homemade jerky. Sliced up a partly frozen 4.5lb bottom round roast into 1/4" slices. Seasoned with a purchased jerky rub. Let cure for 24 hours. Loaded the smoker with some cherry chips....
