If you have a vegeterian friend or if you just want a great salad before you dive into the land of meat and colestrol try this one
ingredients---3 ripe California avocados, split with seeds removed---1/4 cup extra virgin olive oil plus one tablespoon---1/2 cup quinoa---1/3 cup fresh diced tomatoes--1/3 cup scucumbers peeled sliced and seeded----1/4 cup orange segments---1/4 cup Italian parsley leaves washed---1/4 cup fresh mint leaves torn---1 clove garlic smashed---2 tablespoon champagne vinegar and salt and pepper to taste
cook quinoa until tender about ten minutes in boiling water drain in fine sieve, rinse under cold water and leave to dry
place garlic,lemon juice,vinegar and salt in bowl and let sit for about 30 minutes stirring occasionally--remove garlic and whisk in olive oil
brush avocados wth oil mix and place in smoker--cut side up(wood to your taste--I use small amount of apple)--smoke at 225 for about 30-40 minutes and remove----combine all ingredients in a mixing bowl and toss well--season with salt and fresh pepper----fill the half-avocados and serve
