Bought a bag of about 60 mussels. First we steamed them for a few minutes until they opened. If they do it open then throw them away as they are not good if closed.
Next we removed half the shell and placed the remaining half with the steamed mussel on the SmokinTex fish rack.
Placed apple chips in the smoke bin
Placed rack in smoker at 145 degrees for about one hour hour.
They turned out great.
Added twisted you can shred fresh parmesian cheese and place under broiler to melt the cheese. Great method I learned in Brussels. The home of the mussel!
