    Smoked, Nice job on the cook!! That looks wonderful.

    Go buy a cheap notebook and write everything down that you did, and what you'd do differently next time. Records will shorten the learning curve, and will help you figure out and remember what you like and don't like.

    I try to keep track of meat weight, quantity
    spices/rubs used
    rack position
    types and weights of wood
    cabinet temp setting
    internal temps
    outside temps

    what I liked

    what I didn't like/changes I'll make next time.

    Looks like you're well on your way.

    I did write everything down on paper, will start a file with all my smoked items.

    I'm having quite a few folks over this weekend for the Packer game. You'll never guess what I'll be serving!

    I did post something on the facebook page, now you can see my face..
