Canadian Bacon pics!
I used the recipe for CB in one of the newsletters here. Pretty good with 2 oz. hickory. Excellent with 1.2 oz. hickory and 1 oz. pecan. Looking forward to trying apple and hickory next. Last pic is breakfast for supper, eggs in the basket or toad in the hole, depending on where you were raised I suppose. Pay more attention to trimming it than I did and you won't have to burn your fingers tearing the chunk of fat loose from the side that's turning your slide of heaven into a bowl while heating it on the griddle.
