    Continuing with the Memorial Day cook theme, Saturday I ran 5 racks of ribs, half a picnic ham and a can of spam.

    I think the add'l moisture from the picnic ham resulted in a straight up (no crutch) 6.5 hour cook on the ribs. These ribs were the best I've ever done. EVERYBODY got the clean plate award!!!

    Now if I could figure out how to get pics to load from my phone...
    I believe in catch and release fishing. I don't want to EAT 'em all, I just want to GREET 'em all!

    BigWalleye is onto something.....Recently I smoked 9 racks of ribs at the same time.... I pulled a rack out, left the others in the ST to hold. The ones that stayed in longer were actually better!

    I think they extra moisture is key. My .02, spend it wisely

    Here's a photo of the previously mentioned KCBS pork loins, with apologies to the OP of the recipe, Caliboy.

    Those teeny little tenderloins are never enough. I started using the same recipe on full up pork loins. Just as good and LOTS bigger to feed a crowd....
