    Default 4 or 5 briskets at one time

    If you've ever smoked 4 or 5 briskets at one time I would love to hear about your smoke.
    Cook time, did you rotate racks, anything you have to share.

    I'm close, but maybe no cigar. I've done 4 pork butts together. Only tips i'd offer:

    1. Try to buy them all similar in appearance, think fat content, first, and size second.
    2. I temp probed the top one and the bottom one, figuring an average for the ones in the middle.
    3. rather than using the actual "slots" on the sides of your ST, you can gain a little height going onto the top of the actual "slot".
    4. I wouldn't open the door except to take meat out. If one is hitting your pull point faster, let it. Pull and cut tat one first, letting the ST function as a warmer to hold the remainder until you're ready for them.
    I believe in catch and release fishing. I don't want to EAT 'em all, I just want to GREET 'em all!
