    Default Memorial Day Brisket

    First up for the weekend Brisket. Picked up a 7lb brisket from my local butcher.
    Smoker prepped with Apple chunks and a couple charcoal briquettes.



    Brisket is from local raised beef. Trimmed up. A coat of Famous Dave's Burger and steak rub along with a coating of Trader Joe's Coffee and garlic rub.





    Into the smoker at 225. Off to bed. Updates tomorrow.

    12 hours later. Internal temp of 202 and probes like butter.






    Wrapping and into the cooler to rest.

    Finished results. Brisket ,Cajun potato salad and baked beans.

    A couple of smoked dogs in case someone doesn't like brisket.
