    Default My first successful brisket!!

    First one was small in weight but I made the mistake of applying same time 😟: next one was 10.33 lbs and was very good!! Smoked at 225degrees from 7:45am till 8:20pm turned off model 1400and it stayed in smoker about 40 min. It was very good, juicy, good bark and flavor was excellent( used salt pepper and paprika). I tried to go by temp but my probe wasn't cooperating.

    You are slicing with the grain instead of against the grain. If you slice against the grain it will more tender.
