    As my Dad would say...We're loaded for bear.

    Got the inspiration here for some pastrami and found a St Patricks Day sale, so off to the races.

    Momma wants a picnic ham, so gotta keep her happy.

    Just got a new slicer, so that'll get a break-in today as well.

    Used a variation on Cudjoe's recipe. More photos coming, but the spice rub is already making wish you folks had smell-o- vision!

ID:	523 and here's the 165 degree mark, so the ham is coming out and the point and flat are getting butcher papered.
    This is my first pastrami and it smells incredible.
    I believe in catch and release fishing. I don't want to EAT 'em all, I just want to GREET 'em all!

    Looks outstanding.....
    I picked up a couple while they are on sale also. Been under the weather lately, so they are in the freezer until I get to feeling better. Don't forget to post some finished results photos. Let's see that new slicer in action.

    That is one pan of awesomeness right there. The flat is a little bit slower, but this pulled at 198. Old slicer( my fillet knife) saw action for the photo shoot.
    Damn, but this is tasty...
