    Default Pastrami on the 1400

    Lovely day to smoke some pastrami. Soaked the corned beef overnight to remove some of the salty ness. Applied my pastrami rub.


    Loaded the smoker with some Jack Daniel's chips and a chunk of cherry.





    Temp set to 225.

    Hit the stall at 156. Wrapping in pink butcher paper to help get through the stall.

    Internal temp of 194. Going to let rest. Reuben sandwichs on tap for dinner tomorrow night.
