I believe in catch and release fishing. I don't want to EAT 'em all, I just want to GREET 'em all!
Attempting a pork shoulder. First time. I have rubbed with mustard, applied rub. It is 7.5 pounds. My plan is to put on tomorrow early AM on 225 for 10 hours then turn up to 250 until it reaches 200 internal temp. Using a combo of apple, cherry and pecan wood. Fingers crossed.
It turned out good. It actually only took 9 hours. Used 1 ounce of each wood and 1 piece of charcoal. Everyone enjoyed it.
