    Default Summer Sausage

    Smoking up a batch of summer sausage today in my ST 1400. Recipe can be found in the recipe section.

    Stuffed and ready for the smoker.

    Smoker set to 140 without any wood for the first hour. Then Iíll add some hickory and increase the temp by 10 degrees every hour unti I get to 170. Will let the sausage smoke until an internal temp of 154.
