The intent for the two elements is to come to temperature and recover temperature faster for the space.
So, anything below 190 degrees on the dial and 1 element is sufficient. If you are over 190 it will be easier on the elements and they will last longer if you use 2.

That's the way it was intended, but it's yours now you can use it how you like!
