A local butcher has great jerky, but the best seems to be pork!

Used loin. Worked great!!!

Can you share the details and any pictures?
trimmed off fat on loin...cut to three lengths and sliced each one in half.
froze slightly the meat to easily slice.
Marinated with mountain house hickpry for 24 hours.
smoked 3 hours at 190 and then built a jerky fan for a computer from Amazon....
dried at 135 for 2-3 hours.....worked great
next time I will rotate jerky halfway thru the smoke as bottom tray was a little overdone.
I like it better than beef and at $2.19 a pond, alot cheaper
was fabulous.
