I have been trying to figure out my fluctuating temps from the thermostat.....I recently bought a weber I grill thermometer
and it shoed me whats happening.
I did the 3-2-1 method of ribs....and recorded it.
3 racks of baby backs using 2 racks in my 1400.
cherry wood and smoked 3 hours, wrapped with foil and applejuice-2 hours and 1 hour after basting with homemades sauce.
ribs were best I ever made!
I set the temp at about 240......you can see what happened and can see the widest fluctuation was when I wrapped the ribs.
I will have to learn to live with it......I also found that when the wood first starts smoking, you add some heat to the cabinet.
If you have a full load, using all 5 trays, I rotate the grills about 1/2 way in the smoke.
