    Default First try at Baby Backs

    I smoked my first batch of baby Backs today, peeled skin last night dry rubbed and wrapped in plastic wrap over night. Cooked at 225 for 5 hours. At about two hours I sprayed them with a mixture of Apple juice, Apple Cider Vinegar and KC Masterpiece BBQ sauce mixed in a spray bottle. I was waiting for the meat to loosen around the bones and shrink but did not see that, I did the toothpick test and felt that they were done, I brushed them with BBQ sauce in last half hour, tastred good but some seemed to be still pink. Any suggestions?

    Could the pink inside be the smoke ring from smoking the ribs? Did you check the temperature of the ribs? Medium should be around 160, well done around 170 degrees. Five hours I think should have been long enough cooking time degrees,

    The time and temp was fine...and passed the toothpick test...should have been fine.
