I've smoked ribs, brisket, butt & more in much colder weather than 30* with absolutely no issues. Have a pal in Maine who has smoked in MUCH colder weather (sub zero) and had no time/temp differentials.

    Default Smokin' in the Cold

I often use my 1400 when the outside temperature is in the 20s. I've never gone any colder but I think I could. We get a lot of cold weather. Stay tuned...... I'll run some tests next winter.
