    Default an omelette for lunch

    Had this for lunch today and thought it was worth sharing.

    Went on a cooking spree a a few days ago and cooked a pair of pork butts along with a 15 lb turkey and 3 slabs of back ribs that all went into the freezer for future use.

    Took a packet of pulled pork out of the freezer this morning and decided that an Omelette filled with a bit of pulled pork sounded like a nice quick lunch. I diced half a small onion, half a sweet golden bell pepper, and a ripe Roma tomato with the seeds removed. Sauted the veggies in a tablespoon of olive oil until softened. Made two 2-1/2 egg omelettes filled with the veggie mixture, a generous addition of pulled pork, and topped with pepperjack cheese.

    Served these with a side of fried diced potato and onion and a glass of Merlot. Hit the spot for us.

    Wow! There's a place next door to me for sale. Perhaps you could move north for the summer and I could stop over for lunch...

    Sounds like all that's missing is a hammock and a nap for dessert!
