    This is my 3rd brisket and came out great, the wife says best one ever!!! Cooked it unwrapped this time, instead of wrapping the brisket after 3-4 hours. Prefer this method!!

    Lookin' good, Mrex. Any dry rub on there? What kind of wood, and how much? What internal temp?

    Truth that...Smoke on my friend..
    I dont smoke that often but when I do I use Smoken Tex!!!!!!!!!.......LOL

    Well started out with a homemade rub like the ones u can buy or blends seen on ST....been smoking meat on all types of pits for many years. put it on @ 6am-3pm...turn off the box and let it sit for an hour or so until the better half got home.
    Mesquite, Hicory, and a few lumps of charcoal....filled the tray..not sure on the wieght.


    Dont go by internatal temps.....I usally smoke @ an hour a pound on heavy beef and pork @ 200 - 225.

    Lastly used a foil pan filled with teryaki, Worch, and water.......1/2 deep under the brisket
    All I can say is Awsome
