    Default simply ribs

    My labor for Labor Day was to smoke 3 racks of meaty back ribs - about 8 lbs. Cleaned ribs, removed silver skin, rubbed with equal parts sweet paprika, black pepper, salt. Wrapped in foil and let rest in refrigerator for about 12 hours. Smoked 5 hours using 4 ounces hickory chunks @ 225f. Dressed the ribs with a liberal coating of Head Country sauce, placed these in a foil packet and cooked for an additional 2+ hours. Plenty of smoke for our taste. Fall off the bone and melt in the mouth tender.

    Description of pictures - full slab of ribs is ready to go into the smoker - chunks of hickory - 3 slabs of ribs in smoker - after 5 hours uncovered on racks they look incinerated but are not charred in the least - at this stage applied liberal coating of sauce then covered with foil and cooked for additional 2+ hours to finish and achieve a glaze - the ribs on the platter are ready to eat.
