During the Thanksgiving Holidays i cook for my whole family from far and wide.

I spend several days preparing for this holiday meal.

The Menu reads:

  • 20-25 pound Turkey (Roasted in the oven, not smoked yet!!! But soon)
  • Gravy
  • 6 - 8 pound Ham
  • Mashed Potatoes
  • Sweet Potatoes
  • Green Beans
  • Broccoli & Cheese
  • Mac & Cheese
  • Corn Bread Dressing (For the normal guest)
  • Stuffing (For the Yankee's amongst us)
  • Deviled Eggs
  • Pumpkin Pie
  • Apple Pie
  • Pecan Pie
  • Hot Rolls


Now it was a juggling act before I purchased my SmokinTex 1400 and cart.

I roll it in to the kitchen and set the temp to 130 and Bingo my own holding warmer.... I then Unplug it and and roll it into the dining room where I then we place the warmed dishes on the table and ring the dinner bell....

I want to test it as a proofing box soon.... Has anyone done that yet??
