Please help with cold smoking bacon

Thank you sir. That really 'clears the air' for me.

For information to those who may be looking for a local source for Morton curing salts, I found that Kroger grocery stores carry those products in selected stores. My local Kroger just happens to be a stocking store.

My first small batch of Canadian bacon is quickly disappearing. I know that I will soon be doing some more. A warning though - this may become habit forming.

Keep on doing what you enjoy.

looks great. I have done some cold smoked buckboard bacon a couple of times. I have a batch curing and think I will hot smoke in the Tex this time and let the wife be the judge of whats best.

I see this a 2 yr old thread but Penzeys spices and Sausage Maker carrries juniper berries. I use them in saurkraut

Tried the bacon recipe twice now, and it is fantastic! I use maple sugar and smoke with maple wood. As far as the juniper berries go, I get them on ebay. No problem!
