O.K. Finally.
Here are a few pictures that I had taken as we were in the middle of dinner. My kids jokingly said "Dad aren't you going to take pictures" as they laughed.
So, I jumped up from the table and carried the ribs to the stove top to stage a few. These pictures are really what was left in the bowl. There were so many ribs in the bowl I couldn't put any more on top or they were falling off.
I thought the ribs were great along with half the family. The other half thought that they were too fatty. They don't know a good piece of meat when they see it.
The recipe was made up the day before and here's what I did.
I use Fiesta Texas Steak seasoning for the base. Link: http://www.fiestaspices.com/index.as...q_texasstyless
1 Tbs Fiesta Steak Seasoning
1 Tbs powdered sugar
1 Tbs course ground black pepper
1 tsp Onion powder
1 tsp Garlic powder
1 tsp Mustard powder
I rubbed the ribs and placed them in the smoker for 7 hours. 4 hours unwrapped and then wrapped them in double foil for 3 hours more.
I took them from the smoker right to the grills and seared them with a mop sauce. The sauce was made from Apple cider vinegar, orange juice, brown sugar, the seasoning rub, and water. I let it boil for about a half an hour stirring as it thickens. Now it was still a thinner liquid to mop the ribs. It wasn't like a heavy BBQ sauce. Just the right touch to get a little caramelization.
All in all it was pretty good cook. I wasn't disappointed at all.
