    OK, folks, you ole buddy Luke Clayton here. I've got another great way for you to put those frozen duck and goose breasts to use! First, rub sugar cure on each breast half, place in freezer bag and add brown sugar. About a half cup will suffice for a gallon bag half full of breasts. For moisture, I add about a half cup of Head Country Marinade but you could get by with Dr. Pepper or Cola.
    Let the breast halves marinade in the frig for 3-4 days in the cure solution. In 3 days the cure will have penetrated the meat to it's center.
    Now.... Remove breasts and drain. Wrap in a good bacon, secure with toothpicks (you can put slivers of pepper if you like). Put in Smokin Tex at 225 degrees for 3-4 hours. Check after a couple hours for doneness and turn.
    I've eaten duck and geese cooked every way imaginable but this is awesome! THE BEST! Remove from smoker, let cool, slice and serve with your favorite crackers and cheese!
