    Default Bark no Bark in the Smokin Tex?

    I have uses a log smoker for years and interested in buying a ST 1400 for the ease of smoking it will provide. I love my brisket to have a bark,burnt ends are like brisket candy to me but I have read that it is not possible to get a bark in an electric smoker. I have watch the Smokin Tex brisket video and did not see a bark or smoke ring but have seen pictures on this forum of brisket that appear to have a nice bark. I am new here so I'm sorry if this topic has been ran into the ground but just like to know first hand actual users, brisket cooked in the ST, bark or no bark

    Dean,

    First, welcome to the SmokinTex forum!

    When I smoke my brisket, I do get a tasty bark. More importantly, I receive rave reviews from my briskets and pork shoulders (butts). My butts have a great bark too!

    The beauty of SmokinTex is the ease of use and quality of results. I've been smoking with ST for nearly 10 years. I wouldn't smoke with anything else.

    Welcome Dean,

    I've smoked a lot brisket and pork butts and I get a good bark every time. It all depends on your temp and time I would say.

    Welcome again Dean and good smokin,
    The bark will be fine if you do not foil...and try cooking at a little higher temp than suggested. JMO

    +1 for BillyBob's comments.

    My butts have a nice bark, as do my ribs. If you do foil to drive up the temp, you'll soften the bark, just remove the foil for the last hour, and the bark'll tighten up again, although the steam from the foiling will tend to dilute your rub some.

    My briskets and butts always have a nice bark on them. My wife the biggest critic I have loves the butts and briskets from the Smokin Tex.

    I used to always foil when using my off-set..but with the Tex, I don't foil anymore. I get the bark and moist tender meat without the "Texas Crutch".......
