I took fresh sausage, shredded cheddar cheese and mixed it together. Stuffed the peppers and put a piece of bacon on top of each one. Added some apple and hickory chips. Set smoker on 225 and let it go for 2 hrs and 45 minutes. They came out great. Bacon was crispy and the peppers had a nice mild after burn.![]()

we do this on a regular basis for parties. They are a big hit. Sometimes we do the sausage and cheese and bacon, other times we just do cream cheese and bacon. About the same time and temp. Just did some this weekend actually.
