SmokinTex recently began carrying a line of thin silicone racks that can be placed atop the metal grills. I just bought 20 of them, because nothing I've used in the past works as well when I make smoked salmon. I coat the racks with Pam spray first. Then I set the fish atop the coated racks while the pellicle forms. When the smoking is complete, the salmon slides off the racks. The fish's skin stays intact, which makes the fish look good (and keeps in moisture).
